Before we explain why you should read this blog, let us introduce ourselves. We are three graduate students completing our master’s degree in nutrition at the University of Illinois at Chicago. Once we finish our coursework and a series of supervised internships in different areas of nutrition (hospitals, community organizations, food service, etc.), we’ll qualify to become food and nutrition experts known as Registered Dietitian Nutritionists (RDN).
We come from different cultures and academic backgrounds that include journalism, public

health and pharmaceutical engineering. (You can read all about us here.) However, we share the common experience of feeling overwhelmed by the amount of nutrition information that exists today and the steady stream of seemingly-contradictory health messaging.
We don’t want to add to the confusion, and we know there’s already an abundance of exceptional nutrition professionals in digital spaces. Rarely, though, are student voices heard

as loudly as the expert ones. But we ought to be heard, especially when it comes to disseminating nutrition information to the general public. Students are the ideal translators of nutrition science and research because we're constantly looking for simple ways to understand complex topics. We know how to translate nutrition information into simple and straightforward language that everyone can understand, because we must do this for ourselves every day.

You can expect us to write about topics in food and nutrition that are relevant, interesting and important, from a perspective that’s balanced and rooted in the facts. Every day, we walk out of class with information we can’t believe we didn’t already know, and that’s what we’ll share with you.
The content on our website is never a substitute for professional medical or nutrition advice. However, we do hope to close the nutrition gap that continues to widen in this country by providing free and reliable information to everyone, regardless of their background.
We hope you enjoy!
