3 shelf stable snack recipes

Is this recipe actually going to be good? That's a question I often find myself asking while looking up recipes on other blogs/YouTube videos. Sometimes I wish I could know the answer to that question before every recipe, but failure is inevitable in the kitchen (and honestly what makes cooking fun). Going forward I hope to share some surefire recipes I find myself making on a regular basis and more....experimental attempts. Not everything is going to be picture perfect, but is still worth sharing!




Peanut butter chocolate oat bars (1)


Every time I bring this to a gathering people ask me for the recipe. The ingredients are simple, it's easy to make, and it's a crowd pleaser!



Ingredients


2 Tbsp ground flax seeds

6 Tbsp water

2 cups old-fashioned rolled oats

3/4 cup dates

1/2 cup peanut butter

1/2 tsp vanilla

1/2 tsp salt

¼ cup dark chocolate, chopped



Instructions


  1. Add flax and water to a food processor. Let it gel for 5 min stirring once halfway.

  2. Add 1 cup oats, dates, peanut butter, vanilla and salt to the food processor and blend.

  3. By hand, stir in the remaining 1 cup of oats and chocolate until well combined.

  4. Press firmly into a 13x9” baking pan




Ranch Flavored Roasted Chickpeas (2)




Who doesn't love crunchy salty snacks? This is a tried-and-true recipe. The flavor combination of the Ranch Spice mix is seriously so good and versatile. Sprinkle it on roasted potato wedges, or use it to make a creamy dipping sauce. Add the chickpeas to a salad or just munch on them by themselves.




Ingredients Instructions


1 can chickpeas, rinsed 1. Pre-heat the oven to 390F

2 tsp vegetable oil 2. Combine the chickpeas, oil and ranch mix in a bowl

1 Tbsp Ranch Spice Mix* 3. Spread chickpeas on a parchment-lined baking

tray and roast for 25-30 min.



*Ranch Spice Mix:


2 Tbsp nutritional yeast

1 Tbsp dried chives

1 Tbsp garlic powder

1 Tbsp onion powder

1/2 Tbsp dried dill

1 tsp salt

1/2 tsp pepper


Mix all together in small jar.




Yogurt covered walnuts





This was an experimental recipe...and it turned out pretty good! I love the taste of candied nuts and wanted to add a frozen yogurt twist. It's something sweet and refreshing to enjoy as the weather turns warmer.



Ingredients


2 cups walnuts (or any nut)

2 Tbsp maple syrup

2 Tbsp shredded coconut

1/4 tsp ground cinnamon

Yogurt of your choosing



Instructions


  1. Combine nuts, maple syrup, coconut, and cinnamon in a bowl.

  2. Spread evenly on a parchment lined baking sheet and bake for 10 min at 350F stirring once halfway.

  3. Let walnuts cool then dip in yogurt and freeze for 1-2 hours. Store in freezer!
